If you enjoy dark chocolate brownies with chopped nuts, you will love these energy bites. No baking is one bonus, the other is they are packed with fiber, protein, and omega-3 fatty acids. A few pulses in a food processor and you are all set.

Flaxseed meal: A great source of omega-3 fatty acids and fiber (I use Bob’s Red Mill)
Medjool Dates: High in fiber, antioxidant rich, and adds a natural sweetness
Cashew butter: Naturally sweet, loaded with healthy fats and magnesium
Cashews: Low in sugar, adds crunch, and all the benefits of cashew butter
Cocoa Powder: Natural antioxidants
Vanilla Extract

Make Them Nut-Free:
In our family, each of us has a food sensitivity. I usually make two batches of these – one without nuts. I recommend substituting the cashews with sunflower seeds and the cashew butter for sunflower butter.

Ingredients
10 Medjool dates, pitted
1/2 cup cashews, unsalted
1/4 cup cashew butter
1/4 cup golden flaxseed meal
4 tablespoons cocoa powder
1 1/2 teaspoons vanilla extract
1/2 teaspoon sea salt (use 1/4 teaspoon if cashews are salted)
Instructions
- Add dates and cashews to the food processor. Pulse a few times to slightly break them down.
- Add remaining ingredients and blend on high until a moist coarse meal is formed.
- Scoop two tablespoons of mixture into the palm of your hand. Press tight to mesh the mixture together and then form a ball.
- Store brownie energy bites in an airtight container.
Notes
For finer chunks of cashews, run cashews through the food processor before adding dates. If using salted cashews, reduce salt to 1/4 teaspoon. Make it nut-free: Substitute cashew butter and cashews, for sunflower butter and seeds.
