We bought into the Taco Tuesday trend years ago. I find it is hard to resist seasonal vegetable combinations or grilled shrimp and fish. No taco is complete without a delicious variety of fresh toppings. One of my favorites is homemade pineapple salsa. Salsa recipes should be simple, yet pack a punch of flavor.
Whole pineapples are available year-round. In spring and summer, the produce section has pineapples stacked everywhere. Summer is approaching, and I have a few ideas on how we will use them. At the top of my list, is the freshest and most flavorful pineapple salsa you will ever eat. The ingredients are simple and the flavors come together effortlessly.
1 cup fresh pineapple Zest the lime and give the zest a quick chop before juicing. In a large bowl, combine all ingredients. Allow the salsa to sit for 10-15 minutes and flavors will come together. This salsa tastes best with a fresh ripe pineapple. However, feel free to substitute with a can of well-drained pineapple tidbits. If you want a little boost of heat, add some of the jalapeno pepper seeds.
Fresh pineapple salsa is perfect with tortillas, on seafood tacos, or atop grilled fish. Ingredients
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, finely chopped
1/2 cup jalapeno, remove seeds & finely chopped
2 tablespoons of fresh cilantro, chopped
1/4 teaspoon salt
1/4 teaspoon minced garlic
1/2 teaspoon ground cumin
2 tablespoons lime juice
