Ingredients

1 medium red onion, thinly sliced
1/2 cup apple cider vinegar
1/2 cup water
1 tablespoon maple syrup or honey
1 1/2 teaspoons kosher salt
a pinch crushed red pepper flakes, optional

Instructions

  1. Thinly slice the onion and pack rings into a pint-sized mason jar.  
  2. In a small saucepan,  add vinegar, water, maple syrup, salt, and crushed red pepper (if using).  Bring to a gentle boil over medium heat to dissolve the salt and pour mixture over onion slices. 
  3. Use a small utensil to carefully press onions down in the jar.  Make sure the liquid covers all onions. 
  4. Allow the pickled onions to cool for 30 minutes.  Refrigerate for up to three weeks.
