How to Make Galette Dough

Galette dough is one of the easiest pastry doughs you can make. You will only need four ingredients and an hour in the refrigerator.

I am not a fan of making pies. I find the process too fussy. Flour, butter, salt, and water make this galette dough buttery and flaky once combined and chilled. Use a food processor or a bowl and pastry cutter.

Create a dough that is evenly moistened and presses easily.

Empty onto your work space and form dough into a disk. Wrap and refrigerator for an hour.

Ingredients

1 1/2 cups bread flour or all-purpose flour
1/2 cup unsalted butter, cubed and cold
1/2 teaspoon kosher salt
5-6 tablespoons water, cold

Instructions

  1. In a food processor, add flour and salt.  Pulse 2 times to combine.
  2. Add butter and blend on low or pulse until well combined.
  3. Slowly add water until evenly moistened.
  4. Add dough to your work surface and form it into a disk.
  5. Wrap and refrigerate for an hour.

Notes

You may also make the galette dough in a large bowl. Use a pastry cutter (or your hands) to combine the butter and flour. Then add water a tablespoon at a time.
