Granola is a great snack, yogurt topping, and breakfast cereal all in one. This delicious maple almond granola recipe is simple to make with only a few ingredients – most in your kitchen pantry.

Maple almond granola is such a versatile snack. With so many granola varieties on grocery store shelves, making a homemade batch puts you in charge of the ingredients.

Granola Baking Tip: You can bake the granola for the full 25 minutes without tossing the mixture. Once cooled, this will create a texture of large chunks – great for snacking. If you plan to use the granola mostly for cereal or as a topping, toss the maple almond granola mixture halfway through baking. The granola will not stick together as much.

Ingredients

1/2 cup creamy almond butter
1/2 cup coconut oil, melted
1/2 cup maple syrup
2 teaspoons vanilla extract
3 cups rolled oats*
1 cup sliced almonds
1/4 cup pumpkin seeds (pepitas)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon sea salt
1/2 cup dried cranberries

Instructions

1. Preheat the oven to 350 degrees Fahrenheit.
2. Line a baking sheet with parchment paper.
3. In a large mixing bowl, add coconut oil, maple syrup, vanilla extract, and almond butter. Whisk to combine.
4. Add in rolled oats, cinnamon, nutmeg, salt, almonds, and pumpkin seeds.
5. Bake for 22-25 minutes, until golden brown.
6. Cool for 45 minutes.
7. Add cranberries and mix granola.
8. Store in an airtight container.

Notes

*To make this recipe gluten-free, use gluten-free rolled oats.
